A note from Joelle...
As a student I try to avoid things like Super Noodles and Pot Noodles because the nutritional content is not very good. They are typically made with a little bit of water and eaten in the thick, gloopy mess on its own.
I have never eaten it like this, instead I make it into a spicy soup with plenty of veg, seasoning and shredded chicken breast or prawns if I have any.
I normally make it quite spicy because it's really cold where I am living in Scotland and it is an excellent winter-warmer! It's also usually done in about 20 minutes, so great when you need a quote and tasty meal.
I picked up a chicken flavoured one and created this recipe, which is healthier and tastes really good (if I do say so myself!). Enjoy!
You Will Need:
1 packet of Super Noodles (including the flavouring sachet inside
1 packet of de-shelled prawns
8-10 cups of water
Chilli powder/ or 1 fresh chilli with the seeds
1 deep saucepan
*You can also add Chinese cabbage to this for extra crunch (I ran out of it!)
1) Add the noodles, and all the spices and flavourings to the water.
2) Leave to simmer for 6-8 minutes on a hight heat. Make sure it does not fully boil over.
3) You can add the prawns in at this point and cook for a further 5 minutes Or you can fry the prawns with garlic, fresh chilli and fresh lime juice first, and then add to the soup right at the end.
And there we have it - done in no time!
