Rule Britannia!

The Diamond Jubilee is almost upon us and many of us Brits are getting out Union Jack flags and party decorations ready for the big weekend ahead. For those that aren't familiar with UK royalty news...
It is HM The Queen's 60th year on the throne! Wow - that really is a long time and she is truly wonderful  to have been going on for so long!
Whenever there is a royal event (like the Royal Wedding) or a jubilee, everyone unites as a proud nation and have street parties (having long tables in the road and getting the community together for a bit party!) and a nice BBQ.
I'm not sure if the weather is going to be a glorious as it has been for the last couple of days, but us Brits should be used to disappointing weather by now!
My first experience of a jubilee was in 2002 when it was the Golden Jubilee celebrations. I was still in primary school and had to play the national anthem on the flute for the entire school - can't believe I remember that!
We were also given these amazing bronze commemorative coins to remember the event, which I still have. They aren't worth anything, but it would be great to should the grand-kids in sixty years' time ;)

Anyway, back to this week's celebrations, it's a great chance to catch up with the neighbours/old friends, eat too many sausages and have an all-round jolly time.

Seafood Stir-Fry

Who doesn't like a good stir-fry? They are healthy (most of the time) and never take more than 30mins to make. This recipe actually took me only 28 minutes. It is a lovely colourful and refreshing dish which is perfect for Summer!

Ingredients: Stir-fry vegetable mix, fresh pepper, 1 chilli (optional), 1 onion, 2 cloves of garlic, two packets of ho-fun noodles, pinch of salt, seafood mix, light soy sauce.
Chop the onions and garlic into samll chucks 
When the oil in the wok is hot, add the chopped onion and garlic at simmer
Then add the chopped chilli (optional) and the defrosted seafood mix and cook  until  the seafood  changes colour
Then add the stir-fry vegetables with a few dashes of soy sauce (or salt if you prefer). Also add the chopped pepper for extra crunch
Once the vegetables are softer and semi-cooked, add the ho-fun noodles and then stir. More soy sauce may be needed at this point as the noodles absorb flavour
Keep stirring...
Et voilà! Easy seafood stir-fry!

Question Wednesday: Travel

Is it Wednesday already? WOW, they come round so fast! As you probably know, every Wednesday I take part in 'Question Wednesday' which has a new topic every week. If you would like to join in the fun, check out Nikki's Blog here as she is the founder and has all the info!

Today is all about 'Travelling': 
I took this  from the island of Lipari in Sicily

1. If you could travel anywhere in the world where would it be?

I would love to go to South America or anywhere in Oceania. 

2. Where is the coolest/best place you have ever traveled?

I went to Sicily last month and went up Mount Etna. It actually erupted about an hour after so I'm glad we got down in time! We ate great pizza and met some friendly locals, so I had a great time. Oh no! I've changed my mind! China has to be the coolest place I have ever been. I went   to Beijing and Xi'an when I was 15 and it was brilliant. We did all the touristy things (Olympic Park, Great Wall, Terracotta Army, etc) and it was fabulous! 

3. How do you feel about road trips?

I love them, as long as there is enough food and entertainment. I'm fortunate to not get travel sick and I can fall sleep just about anywhere.

4. You just won two tickets to your dream vacation, who's going with you?

I would honestly take my mum. She is very organised and knows everything!

5. Airport security is only allowing you to take 3 make-up items with you, what are they?

 Mascara, hand cream and Vaseline lip balm.

Boho Traveller Backpacks YAY or NAY?

I spotted lots of hipsters in my college sporting this mini textured rucksacks a few months ago and I have to admit, I hated the look of them! I think it was the way they just hung from people's shoulders and looked really scruffy!
However, as most of you know, I went to Sicily for a geography thing and had to buy a practical (yet really cute) backpack. I found the cute rucksacks in Topshop, Urban Outfitters, etc. But there was much more variety in Primark, which I was not expecting!
