Hellooooooooo! I am back with a new recipe, which I made out of sheer desperation. I had a bit of veg left from a stirfry and some frozen sea food. I was going to heat them all together in a wok and have it with rice, but that was really boring and would take a long time (anything over 30 minutes is a long time for me!).
I thought I'd try my hand at making a soup, although it's more of a broth - light and refreshing, not creamy and thick.
Here's how I did it:
De-shelled Cooked Mussels
2 Glugs of dark Soy Sauce
1teaspoon White Pepper
1 teaspoon Chilli Powdern (or half a fresh chilli)
Pinch o' Salt
2 stems Spring Onion
2 cloves Garlic
1 tin Sweetcorn (or one cob with the corn cut off)
2 tablespoons Vegetable stock
Fill up a pan half-way with water and then add all the chopped vegetables once the water starts to simmer.
Then feel free to add the flavourings, but no too much soy sauce/salt as the seafood provide quite a salty flavour too.
|Wash and then defrost the prawns and mussels in a microwave. Then add to the broth and stir. Make sure not to over-cook the soup as the prawns and mussels may taste a bit rubbery!|
