A note from Joelle... 
I first made these for my old music class last year and they went down a storm. So this year, I tried my hand at it again to take to a picnic!
If you didn't know, Whoopie Pies are American dessert/cake/biscuity things made from fluffy marshmallow sandwiched between two chocolate cake/cookies. They are seriously delicious and super easy to make! 

Ingredients (To make 12 whole whoopie pies)

                                                                     For the cookies:
125g unsalted butter 
200g dark soft brown sugar
1 large egg
1 tsp vanilla extract
270g self-raising flour
40g cocoa powder
1 tsp baking powder
½ tsp salt
125ml buttermilk
100ml hot (not boiling) water

                                                                       For the filling:

200g marshmallow (or the jar of fluff)
125g unsalted butter, softened
200g icing sugar
1 tsp vanilla extract
50ml milk

Lightly grease a baking tray and set aside. Preheat the oven to 180 degrees/gas mark 4.

 Cream together the butter and brown sugar in a mixing bowl until light and creamy. Add the egg and vanilla extract and mix again. Then sieve the flour, cocoa and baking powder into the bowl and add the salt and buttermilk . Mix thoroughly until everything is incorporated. Add the hot water and whisk.

 Spoon or pipe the chocolate mixture onto the prepared baking tray and leave to stand for 10 minutes. This will allow the little dome mounds to take shape. Bake in the preheated oven for 10–12 minutes. Remove the cookies from the oven, let cool slightly then turn out onto a wire rack to cool completely.
For the filling, whisk together the marshmallow fluff  (or melt the solid marshmallows) and butter in a mixing bowl. Sift in the icing sugar, add the vanilla extract and milk and whisk again until light and smooth. 

Add a generous dollop of the filling onto a cookie and that sandwich it together with another cookie.
