Moules Marinière (Steamed Mussels)

My Mum makes the best Moules marinière EVER! It's so fast to make and consists of very few ingredients. 
Lots of people are a bit scare to cook or even try mussels because of how they look/smell. I promise you that when cooked well, they don't have that fishy aroma and most good foods don't look the best! 

You will need:
1.5kg FRESH, mussels (easy to pick up from the supermarket fishmongers) - and yes, they have to be fresh aka still alive
2 cups of single cream
50g butter
3 chopped cloves of garlic
a splash of Vermouth or white wine (optional) 
Pinch of salt/pepper
Chopped spring onions or parsley 
*Before cooking fresh mussels, you have to clean them (remove bits of seaweed) and make sure you discard any ones with a broken shell or already open. These are dead and will make you ill if you eat them!!
 - Melt the butter in a hot pan
 - add the garlic and the mussels
- Stir around for a few seconds 
- add the alcohol and then the cream
 - Stir until combined well 
 - Once all of the mussels are open, scoop into a bowl and serve with crusty bread and a sprinkle of spring onions
Delicious! It's done in under 10 minutes, quite healthy and will really impress your family and friends!
