RECIPE: Banana Bread Bites

Banana Bread Recipe
Are you tempted to throw out those overripe, speckled bananas that you're not going to eat? STOP, wait a minute, fill my cup, put some liquor in it, why not make tasty banana bread bites?
When I say, banana bread, it's actually a banana cake, but I wanted to make a more interesting alliteration, okay?!

You Will Need:
2 overripe bananas
150g golden caster sugar
Splash of vanilla extract
200g self raising flour
1tsp baking powder
1 egg
100ml sunflower oil

Preheat the oven to 178C
Mash bananas and mix with the sugar and vanilla
Add the other ingredients and mix well so that there are no lumps
Pour into a well-greased cake/loaf tin and bake for 40 mins
Let the cake cool in the tin for at least 10 mins before lifting it out and cutting into squares
You can dust with icing sugar or thin icing if you wish, but it's fine on its own!
