Coconut Breakfast Porridge

Coconut Porridge Recipe
I actually hate porridge. 
I refused to have it as a child and could not stand the lumpy, gooey look of it. I knew it was healthy and released energy throughout the day, but after watching 'Oliver!', there was no chance of it ever entering my mouth...
Howeverrrrr, one freezing cold Aberdeenshire morning, I stumbled upon and Instagram picture from Sam from Honey Go Lightly. She had made porridge with coconut milk instead of normal milk/water.
This looked really interesting and I wanted to give it a try. 
I had a half bag of porridge oats (that I make my Breakfast Oat Cookies with) and some cans of coconut milk, so I got cracking this morning!
I made up my own recipe, as I had no idea how to make normal oats. And guess what? IT'S BLOOMIN' DELICIOUS!

This serves 2 people (or just you, if you're really hungry!):
Small can coconut milk -  I used an 165ml can
A cup of porridge oats
A cup of cold water
A dollop of pure honey
Fresh strawberries and sliced banana to pile on top at the end (or any fruit you want. Blueberries, chia seeds, passion fruit and flaked almonds are ace!)

Method: put the oats, coconut milk and water into a pan. When it starts to thicken and bubble, stir in the honey. Then when it's at a consistency you like, pour into a bowl and pile on the fresh fruit!
So simple!

Next time, I'm going to go tropical and add slices of mango, papaya and passion fruit seeds once they are all ripe!
If, like me, you don't like porridge, I really recommend you try this recipe. It will completely turn your views around!
This bowl kept me full for six hours, can you believe that? When it came to lunch, I just had a ginger tea as I was still full and beaming with energy from the porridge. I really didn't believe the hype until now! I wish I'd eaten porridge all the way through uni!
