Happy Monday (Ya twistin' ma melon, man) to you all!
Today, I bring you a recipe I have made basically every Summer, but it never gets old!
You will need (serves 4):
8 Meringue nests
A punnet of fresh Strawberries
A punnet of fresh Raspberries
A pot of Double cream
1 tbsp Icing(confectioner's) sugar
1 tsp Vanilla extract
1.Pour the cream and vanilla extract into a clean, cold bowl
2.Use a balloon whisk to whip up the double cream, sugar and vanilla until the cream is thick. (an electric whisk is okay, but it can sometimes give the cream a weird foamy texture)
3. Crush up the meringues into sizeable chunks (not too small, as it will dissolve into the cream) and add to the mixture
4. Add in the fresh berries
5. fold everything in until it's a big 'ol mess.
6. Add a sprig of mint and enjoy!
If you're feeling more adventurous, why not try a decadent Eton Mess with black cherries, chocolate curls and chopped hazelnuts, with a drop (or two... or three) of Bailey's in the cream?
Or you could do an Autumn Eton Mess with poached pears/plums/peaches and cinnamon apples?
The possibilities are endless - Season's Eatings!
